The signature ppyeodagwi haejangguk arrives in an overflowing stone pot with two or three enormous pork spine bones rising well above the rim, a visual impact that sets the tone before the first bite. The amount of meat clinging to the bones is substantial, and after thorough braising it separates effortlessly without any toughness. The broth carries a gentle hint of ginger alongside a spicy, assertive kick, and a measured portion of dried radish-leaf greens adds an earthy, comforting undertone.
