Operating since 1961 in Chuncheon's Nakwon-dong, this is the original charcoal-grilled dakgalbi restaurant, and the difference from iron-plate versions is immediately apparent. Grilling the chicken directly over blazing charcoal imparts a smoky depth that you simply cannot get on a flat griddle, and the meat comes out incredibly tender. You can choose between soy sauce and spicy marinades, and I preferred the soy sauce version for letting the charcoal flavor shine through without being masked by heavy seasoning. The key technique is flipping the meat every ten seconds, and the friendly owners patiently guide first-timers through the process. The chive salad side dish is an absolute standout that I requested seconds of. The makguksu noodles are traditional countryside style with a clean, understated flavor that pairs beautifully with the smoky chicken. The doenjang-jjigae is loaded with dried radish greens for a hearty, savory broth, and the dongchimi is refreshing enough to skip ordering a separate drink. No dedicated parking lot, but you can queue remotely through Catch Table.
