Shin Migyeong Hongdae Dakgalbi 신미경 홍대닭갈비

Shin Migyeong Hongdae Dakgalbi is a chicken stir-fry restaurant at 31-10 Wausan-ro 21-gil in a Hongdae side street. It serves vegetable dakgalbi and a cheese-fondue version on a tabletop griddle. Unlike a Chuncheon-style setup that begins with raw chicken cooking entirely at the table, the kitchen stir-fries most of the dish before transferring it to the hot plate. Diners can divide the cooked chicken and vegetables soon after arrival, then use the griddle for cheese, noodles, and fried rice. While the main dish is being prepared, pancake batter is poured onto the table griddle. Staff return to turn it, and the cooked pancake is divided as a small starter. Vegetable dakgalbi combines chicken, cabbage and other vegetables, sweet potato, and cylindrical rice cakes in a sweet-spicy seasoning. Sweet potato and rice cake cook at different rates from the meat, while cabbage softens and absorbs sauce. Added noodles increase the staple portion and collect seasoning left between the chicken and vegetables. Cheese-fondue dakgalbi melts mozzarella and cheddar in a separate section of the pan. Mozzarella supplies stretch, while cheddar adds a stronger salty dairy flavor and deeper color. Chicken and rice cake are dipped while the cheese remains warm. The standard version keeps chili sauce and vegetables at the center, while the fondue version adds two cheese textures. Fried rice follows after the chicken. Rice is stirred through the remaining sauce and vegetable fragments on the same iron surface. Snow-cheese fried rice covers it with a layer of cheese that melts and toasts. Flying-fish-roe fried rice adds small popping grains instead. A table that already ordered cheese fondue can change texture with roe, while one continuing the dairy component can select snow cheese. Dongchimi and additional side dishes come from staff at the self-service bar, providing cold broth beside the hot pan. The broad dining room gives groups enough space to share a central griddle. The meal proceeds from pancake to kitchen-prepared dakgalbi, optional cheese or noodles, and one of two fried-rice finishes.
