Before the pot boils, diners mix their own dipping sauce from vegetables, soy sauce and minced chili seasoning, adding mustard to taste. Once the clear vegetable broth bubbles, fish out the floating rice cakes first, then the mushrooms and chicken. Most tables go back several times for the self-serve refills of water kimchi, which has an aged-kimchi tang, and sauce vegetables. After the chicken is gone, the leftover white kimchi and seasoning go into the broth with thick kalguksu noodles. The noodles need a long simmer, and the soup gets richer toward the end. The shop is one of the oldest in Jongno's dak-hanmari alley, about 300 m from Jongno 5-ga Station, and appeared in the film Himalaya. Dinner tables fill fast, and groups are better off booking.
