Hanwoo from Hongcheon is sold by the pack at the butcher counter and grilled over charcoal at the table. Cut, grade and fat vary from pack to pack, and the day's meal is only as good as your pick. Between rounds of grilling, order the bul-chobap, torched beef on rice; the doenjang stew comes out thin and clear, closer to a hangover soup.
