Despite the name, gajami mulhoe arrives without any broth. Wild flatfish sashimi is mixed at the table with gochujang and chojang (vinegared chili paste), and anyone who wants soup asks for a separate bowl of ice and lets it melt in. It can also be stirred into rice or wrapped in lettuce. Grilled flatfish comes out among the side dishes, and its firm, springy flesh is nothing like frozen fish; some diners remember it more than the mulhoe. Near the end of the meal a spicy rockfish stew arrives for the leftover rice.
