Suje Guksu 수제국수

The thin noodles are pulled in house and spring back like milmyeon, and the anchovy broth is clean with no off smell. For a noodle shop the donkatsu is a surprise, fried so the underside of the crust never goes soggy, with a demi-glace that tastes sweet and fruity. The braised short ribs divide people. Some found the meat falling off the bone and finished by mixing rice into the leftover sauce; others felt that next to the noodles they were not worth what they cost. A large noodle order means two full portions of noodles in the bowl, not one bigger one, so it is a lot.
