Unlike typical sundae filled mostly with glass noodles, the version here is densely packed with pork blood and various offal, delivering a heavy, savory bite with each slice. The sundae jeongol features a clean yet deeply flavored broth loaded with sundae and assorted innards, elevated further by the addition of perilla leaves and chives. Toasted perilla seeds add a nutty dimension to the broth. After finishing the main course, the proper sequence is to add ramyeon noodles or stir-fry rice in the remaining broth for bokkeumbap, then scrape up the nurungji at the bottom - a three-act meal from a single pot. Ordering the assorted platter brings liver, lung, and head meat alongside the sundae, allowing diners to compare different cuts and textures. Adding saeujeot to the broth draws out its latent depth.
