Down a flight of stairs off a Daehangno side street, low ceilings, candlelight and dim lamps recreate a monastery cloister. Fittingly, the list centers on Trappist beers, monastery-brewed ales that differ bottle to bottle in yeast aroma, sweetness, bitterness and strength. Wine by the glass or bottle, single malts and cocktails give a second round somewhere else to go. Food stays small: a cheese platter, thin-sliced jamon and olives that sit alongside the drinks without covering them.
