Lion's mane, wood ear, king oyster, enoki, oyster and beech mushrooms come heaped beside the pot, and there are still mushrooms left near the end of the meal. Cook the mushrooms first, then swish the hanwoo through, and the broth keeps getting deeper. The small size, with rice cakes and glass noodles, is plenty for two, and kalguksu noodles cook in whatever broth is left.
