The kitchen meticulously skims off fat to ensure a clean starting point, allowing the liquid to intensify and develop its character at the table as it boils. Instead of the typical dried cabbage, a generous pile of fresh perilla leaves tops the pot, which staff replenish alongside broth refills. The owner excludes green onions to avoid sweetness and provides pre-boiled ramen noodles to prevent the base from thinning. Side dishes consist of fresh peppers, raw onions, kkakdugi, and bean sprouts seasoned with perilla oil. The concluding fried rice offers a distinct perilla seed nuttiness that pairs effectively with the radish kimchi brine. Selecting jjolmyeon noodles precludes ordering fried rice later, requiring a prior decision. Daily operations end when the supply of fresh bones runs out, with weekend sell-outs common by 7 PM.
