Cheongwaok Bonjeom is a sundae-guk (blood sausage soup) specialist in Bangi-dong, Songpa-gu, Seoul, recognized as one of the city's top three sundae soup restaurants and selected for the Blue Ribbon Guide. The broth is simmered for over eight hours with herbal ingredients, virtually eliminating the offal odor that typically accompanies sundae soup. The result is a deep yet remarkably clean flavor that stays on the palate long after the meal. The soup arrives generously loaded with sundae and meat, and even without the provided seasoning paste, it carries enough natural seasoning to enjoy plain. Adding dadegi keeps the spice manageable, making customization easy. The pyeonbaek set features sundae, boiled pork, and head meat stacked on bean sprouts in a hinoki wood steamer, allowing fat to drain while preserving a tender, clean taste, an alternative way to experience sundae beyond the standard soup format. The charcoal-grilled East Sea squid pairs smoky char with spicy seasoning, working equally well as a rice companion or a drinking side. The yukhoe arrives in a uniquely minced style, soft in texture, and gains a rich nuttiness when dipped in sesame oil.
