The broth is simmered for over eight hours with herbal ingredients, virtually eliminating the offal odor that typically accompanies sundae soup. The result is a deep yet remarkably clean flavor that stays on the palate long after the meal. The soup arrives generously loaded with sundae and meat, and even without the provided seasoning paste, it carries enough natural seasoning to enjoy plain. Adding dadegi keeps the spice manageable, making customization easy. The pyeonbaek set features sundae, boiled pork, and head meat stacked on bean sprouts in a hinoki wood steamer, allowing fat to drain while preserving a tender, clean taste, an alternative way to experience sundae beyond the standard soup format.
