Thick octopus arrives sizzling on a hot stone plate in a sweet-spicy sauce, with glass noodles underneath drinking it up. It starts out only mildly hot, and the heat builds with every bite. The multigrain rice comes heaped high; scoop it into the big bowl with sauce and seaweed flakes, but hold some seaweed back or it turns salty. Cutting the whole octopus with scissors sends sauce flying, which is why disposable aprons are handed out.
