Sijang Jeongyukjeom Sikdang 시장정육점식당

Sijang Jeongyukjeom Sikdang is a regional Korean restaurant at 177-3 Geumseong-dong in Gongju, near Gongsanseong Fortress. It centers on Hanwoo yukhoe bibimbap and several beef soups. The signature rice bowl places thinly cut raw Hanwoo beneath fine slices of fresh chestnut, a major Gongju product. Smooth raw beef and the firm crunch of chestnut remain clearly separate within one spoonful. Pine nuts add another nut texture, but with more oil and richness than the crisp chestnut. The gochujang emphasizes clean heat over strong sweetness or salt, allowing both beef and chestnut to remain recognizable. Beginning with a small amount of sauce reveals the raw ingredients. Adding more sauce with shredded radish and bean sprouts later expands the bowl through acidity and vegetable crunch. Cucumber is included, supplying another cool, crisp element beside the chestnut. Seonji-guk accompanies the bibimbap. Firm pieces of ox blood and abundant ugeoji sit in a deep beef broth, adding heat and liquid beside the cool raw beef and seasoned rice. The seonji retains a firmer grain rather than dissolving, making it texturally different from the smooth yukhoe. Ttaro-gukbap follows the direction of a Gyeongsang-style beef soup with beef and a stronger savory broth. Hanwoo galbitang moves instead toward clear soup and meat attached to the bone. Two diners can choose one yukhoe bibimbap and one ttaro-gukbap or galbitang, comparing raw-beef rice with a hot beef soup meal. The dining room uses floor seating, with shoes removed at the entrance.
