Smoke Town is a Texas-style barbecue restaurant in Paengseong-eup, Pyeongtaek City, Gyeonggi Province, located near Camp Humphreys. True to its proximity to the American military base, the restaurant faithfully channels a stateside atmosphere with its rustic interior design and old pop music playing overhead. The kitchen follows the authentic Texas barbecue method of seasoning with salt and pepper and smoking low and slow for extended hours, a level of execution that is rare to find in South Korea. The brisket is so tender it splits along the grain when lifted with a fork, while remaining impressively moist throughout. The pulled pork avoids both over- and undercooking, delivering a soft texture with a sweet, distinctly American seasoning profile. The baby back ribs are leaner than spare ribs but retain a pleasant chew on the meat close to the bone. Sausage links carry a well-balanced smokiness. Among the four table sauces, the mustard vinegar stands out as the strongest complement to the meat, its tartness cutting through the richness of the proteins. Side dishes are clearly prepared in-house: coleslaw dressed with balanced mayonnaise and dressing, baked beans executing the classic sweet-salty formula, crispy French fries, cream corn, and potato salad all provide effective counterpoints to the heavy meats. The garlic butter bread is a must-add order. Pasta options including toomba pasta and tomato spaghetti also demonstrate unexpectedly high quality. Platter menus accommodate two or three diners, and portions are substantial enough that moderation in ordering is advisable. An extensive selection of beer, cocktails, and other alcoholic beverages is available at the bar. The parking lot is spacious and the dining room is generously sized, though waits can develop around the 5:00 PM dinner opening time.
