A chef who grew up in East LA makes everything from the tortillas to the salsas in-house. The tacos to know are al pastor, chile-marinated pork with roasted pineapple, and carnitas, slow-cooked pulled pork that goes back on the grill, both finished with chipotle hot sauce. The guacamole has only a faint trace of cilantro, mild enough for people who usually avoid the herb, and it makes good scooping with nachos while the tacos are on the way.
