Pork lean, skin, stomach and tongue are cooked in fat as carnitas, and you pick the cut that goes into each carnitas taco. The offal cuts taste a little like the meat in Korean sundae soup, and the tongue turns out as soft as braised pork belly. Because a porky aroma comes through, squeeze plenty of lime from the self-serve bar and add salsa. The chorizo taco is filled with just the sausage meat, spicy but clean. Tacos are the only food, three Mexican beers are on hand, and a special appears on Saturdays only. The shop seats just five or six groups, and lines form at mealtimes.
