Seolcheon Sundae Gukbap 설천순대국밥

Cabbage greens and dried radish leaves keep the broth clear and light, so anyone expecting a heavy pork soup will find it mild at first. Stir in a generous handful of the chives provided plus some dadaegi chili paste, and the sundae gukbap, Korean blood sausage soup, gains its punch. Perilla seed powder sits on the table too, but adding it dulls the clean finish of the broth. The sausage is soft, mixed with glass noodles and vegetables, with almost no porky smell.
