The fresh noodles keep so much bite they can seem slightly underdone, and that chew shows most in the mazesoba, tossed in a dark sauce with no soup at all. On the soup side there are clean soy-sauce shoyu ramen and nutty, spicy tantanmen, neither of them greasy. The seating is set up for eating alone.
