The signature hae-nae-tang features a deeply simmered ox bone broth loaded with generous chunks of seonji (blood curd), cheon-yeop (tripe), and various offal cuts - one bowl is substantial enough for a full meal. The innards are meticulously cleaned, and the broth comes pre-seasoned to a balanced level that requires no additional adjustment. A house specialty is dipping the offal in a self-mixed sauce of chili oil, soy sauce, and minced cheongyang peppers, creating a pungent counterpoint to the rich broth. Although not listed on the menu, customizations such as removing bean sprouts or adding extra seonji or offal are available upon request. Three side dishes - kimchi, kkakdugi, and gungchae - accompany each order. The dining room has the lively, bustling atmosphere of a veteran neighborhood institution.
