Off-menu requests are taken in stride: no bean sprouts, extra innards or extra seonji (blood curd). The haenae-tang holds big blocks of seonji, frilly cheonyeop (omasum) and gopchang in generous amounts, and the first spoonful carries a faint offal smell. For the innards, mix chili oil, soy sauce and minced cheongyang chili from the table into a dipping sauce.
