Eomeoni Daeseongjip 어머니 대성집

Eomeoni Daeseongjip is a long-running haejangguk restaurant in Yongdu-dong, Dongdaemun-gu, Seoul, serving its beef soup since 1967. The main bowl uses the toryeom method: rice is warmed in broth before service rather than arriving as a dry bowl beside the soup. Beef-bone stock surrounds the softened grains, shredded beef, napa greens known as ugeori, and large blocks of seonji, or cooked cattle blood. A portion of red seasoning paste rests on top. Leaving it intact for the first spoonfuls keeps the original bone broth distinct, while dissolving it later adds chile and garlic throughout the bowl. The shredded beef disperses into the rice and greens, so smaller fibers appear in nearly every spoonful. Seonji remains in larger pieces and can be cut with a spoon, dipped back into the stock, and alternated with the softer cabbage leaves. Freshly dressed napa kimchi and a sweet, crisp radish salad provide colder vegetables beside the hot soup. Cheongyang chile and salted clam are served separately, allowing pungency and salinity to be added without changing the entire pot at once. The menu also includes boiled beef and offal. A mixed suyuk plate places brisket and several organ textures together, making the lean grain, fatty edges, and springier offal easier to distinguish than in the soup. Yukhoe bibimbap is a separate rice dish built from thin raw beef, vegetables, sesame oil, and seasoning rather than broth. The restaurant occupies several floors, with straightforward dining tables large enough for either one earthenware soup setting or a shared platter of sliced suyuk with individual sauce dishes.
