Eomeoni Daeseongjip 어머니 대성집

Eomeoni Daeseongjip is a historic haejangguk (hangover soup) restaurant in Sinseol-dong that has been in operation since 1967. The signature dish is prepared in the toryeom style, where rice is added to the broth before serving. The 24-hour simmered beef bone broth is topped with finely shredded beef, tender napa cabbage greens, and fresh blood curd. Tasting the broth before adding the spicy seasoning paste allows for a full appreciation of its clean umami. As the meal progresses, the flavors from the beef and greens deepen, providing a satisfying quality. The boiled offal (suyuk) is noted for its clean preparation and tenderness, often preferred over the standard beef cuts. A popular combination involves the mixed suyuk of brisket and offal paired with traditional spirits. The raw beef bibimbap, characterized by fragrant sesame oil and fresh beef, is also a staple order. Side dishes include fresh kimchi, sweet radish salad, and salted shellfish. The restaurant has relocated to a three-story building and remains busy even in the early morning. It closes between 3 PM and 6 PM for a daily break.
