Eomeoni Daeseongjip is a historic haejangguk (hangover soup) restaurant in Sinseol-dong that has been in operation since 1967. The signature dish is prepared in the toryeom style, where rice is added to the broth before serving. The 24-hour simmered beef bone broth is topped with finely shredded beef, tender napa cabbage greens, and fresh blood curd. Tasting the broth before adding the spicy seasoning paste allows for a full appreciation of its clean umami. As the meal progresses, the flavors from the beef and greens deepen, providing a satisfying quality. The boiled offal (suyuk) is noted for its clean preparation and tenderness, often preferred over the standard beef cuts.
