The ssamjang, a lettuce-wrap paste, is packed with river snails, nuts and dried tofu, loose like thin peanut butter and nutty rather than salty. Kale, mustard leaves and other greens grown in Naju are refilled along with the paste, next to slightly sweet spicy pork (jeyuk bokkeum), smoked pork or beef bulgogi. Orders start at two servings.
