Pyeongyang Myeonok 평양면옥

Pyeongyang Myeonok is a long-running Pyeongyang-style naengmyeon restaurant in Oryu-dong, Guro-gu, Seoul, serving chilled broth noodles, spicy mixed noodles, sliced boiled beef, and mung-bean pancakes. Diners remove their shoes before entering the floor-seating dining area. The traditional wooden exterior gives way to a cleanly renovated interior. Noodles are pressed after the order and arrive as thick strands. Their character leans more toward wheat elasticity and starch than a strong buckwheat aroma. The clear broth of the mul-naengmyeon begins mild, with restrained meat flavor and salinity. As the noodles are loosened and eaten, starch disperses into the liquid, gradually giving it more body and seasoning. The first few bites can be taken with only noodles and broth to register that progression. Placing the sliced beef garnish over later bites adds savory meat flavor and fat to the otherwise plain strands. Vinegar and mustard change the broth sharply, so adding them after tasting the natural starch transition keeps both versions distinct. Bibim-naengmyeon coats the noodles in red seasoning instead of placing them in a full bowl of clear broth. Its center is sauce, heat, and chew rather than the slow change of the liquid. The thick nokdu-jeon has a crisp perimeter and moist middle, adding warmth and the nuttiness of mung beans between cold noodle bites. Pyeonyuk is a separate plate of tender boiled beef with visible lean and fatty sections, allowing the meat texture to be eaten in larger pieces than the garnish on the noodles. Dumplings provide another warm component during the colder season.
