The Pyongyang naengmyeon has enough seasoning in its clear beef broth that first-timers don't find it strange, and ask for more broth and staff pour in a generous ladleful. The bossam comes without the usual bossam kimchi: tender boiled pork goes into lettuce with seasoned raw pollock, pickled garlic and green chili instead. The dumplings are packed with kimchi filling, and on cold days five of them go into a bowl of kimchi mandu-guk, or into a mandu jeongol hot pot.
