Peking duck has to be reserved ahead; it is carved at the table into skin and meat, then wrapped in thin pancakes with sauce. What is left after carving comes back as a second dish, often fried, with a crumbly, snack-like crunch that can surprise anyone expecting plain duck. Duck gets monotonous after a while, so pick side dishes from elsewhere on the menu, dim sum or the corn crispy cheung fun, rather than more duck.
