The bomal ppulsora tot kalguksu combines buckwheat-blended noodles with bomal sea snails, horned turban and hijiki in a thick, mildly spicy broth. The seafood kalguksu is loaded instead with blue crab, shrimp, mussels and abalone. Once the noodles are gone, rice goes into the remaining broth. Horned turban porridge has a different savory depth from abalone porridge, and raw turban shell is a little tough, while blanched pieces are softer.
