Tofu is made from domestic soybeans at dawn every day, and the yet sundubu (old-style soft tofu) and the assorted tofu plate scoop like pudding. Biji, the soybean pulp, comes without asking, and the tofu jeongol arrives with that same tofu spooned generously into the pot. Kongguksu is made with soy milk pressed that day, while the chewy, spicy stir-fried baby octopus and the acorn jelly salad tend to get ordered as makgeolli snacks.
