Myeongseo Milmyeon 명서밀면

The mul-milmyeon broth is clear but faintly sweet, with an herbal, almost medicinal scent that sets it apart from the usual Busan-style milmyeon. The bibim version hides meat in its sauce and stays fairly mild. Mandu wrappers are thin and translucent yet chewy, as though potato starch went into the dough. The shop has been inside Myeongseo Market for more than 30 years. When the room is full you can sit straight away on the outdoor platform, but it has no windbreak and gets cold on chilly days. Ask for no ice and the cold noodles are manageable even in winter.
