After an initial sear in the kitchen, staff grill and cut the ribs tableside into bite-size pieces, and the visual presentation is part of the appeal. The first bite is memorable, but the straw-smoked udae galbi is rich and fatty, making it hard to eat in large volume. Frozen sweet-and-sour radish salad and onion kimchi are essential for balancing that richness. Bibim naengmyeon is a widely praised pairing, and yangpa bap or fried rice makes a satisfying finish.
