I ate straw-fire smoked udae galbi, bibim naengmyeon, and doenjang jjigae at this specialty restaurant, a one-minute walk from Samgakji Station Exit 8. After an initial sear in the kitchen, staff grill and cut the ribs tableside into bite-size pieces, and the visual presentation alone is stunning. The first bite draws genuine surprise, but the straw-smoked udae galbi is rich and fatty, making it hard to eat in volume. The frozen sweet-and-sour radish salad and onion kimchi served alongside are essential for balancing the richness. Bibim naengmyeon was highly recommended by multiple visitors, and it delivered. The yangpa bap and fried rice also made for a good finish. No reservations are accepted, and queuing is through Catchtable. Even weekday waits can exceed 90 minutes, and without a local phone number the waitlist system is difficult for tourists. There is no parking, but subway access is excellent, and the early-modern-era building atmosphere adds character.
