Wet panko gives the cutlets at this Ichon original a tall, craggy crust. Hirekatsu (pork fillet) and rosukatsu (loin) can be split half-and-half on one plate, and instead of the usual pickles the sides are gochuji (pickled chili) and kkakdugi radish kimchi. The shop moved next to Ichon Market into a room more than twice the size, with a draft-beer tap.
