The kalguksu noodles are made with acorn, chewy and without the floury smell of plain wheat. Even so, the dish regulars order almost every time is dotori-muk tangsuyuk, an acorn-based sweet-and-sour fry ordered half chicken, half mushroom, with makgeolli alongside its sugary sauce. Kalguksu comes as creamy deulkkae with ground perilla seed, yukgaejang with taro stems, a seafood version heavy on mussels, or kong kalguksu in thick soy milk, and every bowl is generous. Extra noodles are free, and each diner gets a small fried bun on the house.
