Kiwamaruaji 키와마루아지

The illustrated menu lays out each bowl like a field guide, making the differences between Mi Ramen, Special Mi Ramen, Goku Ramen and tsukemen clear before you order. Mi Ramen's tonkotsu broth hits hard from the first spoonful, but sweetness and oily weight build as you go, and some find it too much by the end. Special Mi Ramen adds flame-seared chashu and soft-boiled ajitamago, and the chashu is as tender inside as jokbal, braised pig's trotters. Tsukemen is dipped into a spicy sauce, and a splash of Mi Ramen broth mixed in shifts the flavor again.
