The gondre greens are tender rather than stringy, and the grains of rice stay plump. Mix in soy seasoning or gang-doenjang, a thick soybean paste, wrap a spoonful in dried seaweed, and you get the greens and the paste in one bite; more gondre rice is yours for the taking at the self-service counter. In spring, when wild greens are in season, numbered queue tickets come out on many days.
