The kitchen uses a sous-vide-then-fry technique that produces remarkably even doneness throughout each cutlet. The cross-section may show a faint pink hue, but the meat is fully cooked and exceptionally moist. Individual pieces of the rosu-katsu are cut larger than at most competitors, resulting in generous overall portions. The defining element is the dipping combination of Himalayan salt and rosemary olive oil. The aromatic rosemary lifts each bite and keeps the richness surprisingly restrained, an experience rarely replicated at other tonkatsu establishments. The cabbage salad arrives dressed with a tart yuzu vinaigrette that cleanly counterbalances the fried pork, and the accompanying rice is of notably high quality.
