Two bowls anchor this shop about 100m from Seoul National University Station: tonkotsu ramen and miso ramen. The tonkotsu broth is long-simmered from pork bones and runs thick and dense, while the miso bowl leans soft and savory. The extra-spicy level of the miso ramen is much milder than its name, and it gets ordered as a hangover bowl. Noodles are springy and the soft-boiled egg has a runny yolk. Added butter turns rich rather than greasy in the salty broth. Rice is free and self-serve, and scooping it before the ramen arrives lets it cool, so once the noodles are gone it can be stirred into the broth with the corn. Lunch discounts make ramen with a mini gyudon, a small beef rice bowl, an easy pairing.
