Katsuomoi Hongdae is a solo-chef tonkatsu restaurant on Wausan-ro in Seoul's Mapo district, with regulars who have been returning for four to five years - a measure of the consistency the kitchen delivers. The menu centers on two cuts: pork loin at 12,000 won and tenderloin at 14,000 won, both fried to order without exception. The tenderloin offers a delicate, melt-in-the-mouth texture, while the loin brings a richer flavor from the interplay of lean meat and a thin strip of fat. The chef personally recommends the tenderloin at medium doneness, though plenty of devotees prefer the loin. A premium option is also available. Each table is stocked with white truffle salt, Himalayan salt, fresh wasabi, pickled wild garlic called myeonginamu, yuzu dressing, and sesame dressing, allowing a single plate of cutlet to be experienced in multiple flavor dimensions. The pickled wild garlic is an especially compelling pairing with tonkatsu and is frequently requested for additional servings. Rice and soup are refillable at no charge. The interior carries a refined, cafe-like aesthetic with counter seating arranged so that diners watch the chef work through the entire preparation. The meticulous habit of sanitizing hands before every new order speaks to the artisanal dedication behind each serving. Because the chef handles both kitchen and floor duties alone, table turnover is slow and requests for rice or soup refills may take time. Even a single party ahead in the queue can mean a wait of thirty minutes or more, making an arrival at opening time practically essential. Seating is assigned in order of arrival.
