Galmaegisal (skirt) turns chewy as its fat drips away, while hyeomitsal, meat from under the tongue, is streaked with white fat yet soft and nutty. Plates come in 300g of a single cut or a mix, and 150g half plates are available. Wednesdays and Saturdays are beef days, when yukhoe and raw beef slices join the menu. Rice is not sold at all: buy instant rice at a convenience store and heat it in the shop's microwave.
