Hyanggyo Makguksu 향교막국수

In the mul makguksu, a slushy soy-based broth stays unsweet, and the chili sauce on top leaves a light heat at the finish as it dissolves. Seasoning is clearly bolder than the mild style most people associate with Gangwon makguksu. The thin, smooth noodles land somewhere between chewy and tender. Jaengban makguksu, mixed on a wide platter, can be ordered as a single portion.
