Hwangsaengga Kalguksu 황생가칼국수

Beef bones give the sagol kalguksu, knife-cut noodles in bone broth, a weight close to galbitang, and the wang mandu served alongside are packed with clean-tasting meat filling. Those big dumplings are folded by hand right at the entrance. Summer brings cold soybean noodle soup with springy green noodles, and the mushroom hot pot arrives with steamed dumplings to eat while it heats. There is no app queue. You sit on the chairs outside and wait your turn, and coming 10 to 15 minutes before opening usually gets you in with the first group. The shop is on the walking route from Gyeongbokgung Palace to Bukchon.
