Hwangpo Naengmyeon 황포냉면

Locals in Jinju will point you to the teukmi naengmyeon, a bowl halfway between the soup and spicy styles. A shallow pool of seafood broth sits under yukjeon (egg-battered beef), seasoned dried pollack, radish, cucumber and pear, and once mixed, the tang hits first. Instead of a halved egg on top, a whole roasted egg comes on its own plate. Lunch runs on numbered tickets. The buckwheat and sweet-potato-starch noodles are on the thick side, and one bowl is enough to fill you up.
