The raw beef appears fiery red from its seasoning but carries no actual heat, the dominant flavors are the sweetness of pear and the nutty depth of sesame seeds and sesame oil. Vegetables outweigh rice in the bowl, so the initial impression is generous, though the volume feels right as you eat. The yukoe itself is soft-textured, and the dish works best when appreciated as a harmonious whole rather than for the meat alone. The real hidden star is the seonji-haejangguk served alongside, a clear beef broth with blood curd, radish, and finely chopped bean sprouts that tastes brilliantly refreshing and clean.
