Iekei Ramen 이에케이 라멘

Pork and chicken bones simmer together for a cloudy brown broth seasoned with soy and chicken oil, poured over thick noodles with chashu, spinach, scallions and large sheets of nori. The style is Yokohama iekei ramen, which gives the shop its name. Minced garlic and doubanjiang chili bean paste are meant to be stirred in partway through, and nori soaked in broth wraps neatly around a spoonful of white rice.
