The restaurant's defining achievement is the hire-katsu, a tenderloin cutlet of extraordinary softness that dissolves on the tongue in a way that redefines what diners expect from the dish. Both the tenderloin and loin cuts arrive with a thin, immaculate breading, and the kitchen's meticulous removal of every trace of sinew produces a completely uniform, melt-in-the-mouth texture throughout each piece. The recommended tasting progression is printed for guests: start with a pinch of salt to appreciate the pork's natural flavor, then add truffle oil for an aromatic dimension, try wasabi for sharpness, and finish with the traditional dipping sauce for a richer profile.
