Both the tenderloin and loin cuts arrive with a thin, immaculate breading, and the kitchen's meticulous removal of every trace of sinew produces a completely uniform, melt-in-the-mouth texture throughout each piece. The recommended tasting progression is printed for guests: start with a pinch of salt to appreciate the pork's natural flavor, then add truffle oil for an aromatic dimension, try wasabi for sharpness, and finish with the traditional dipping sauce for a richer profile. Rice is cooked to a pleasantly firm consistency and is refillable along with the accompanying soup. The pickled onion banchan serves as an effective palate cleanser between bites of the rich cutlet.
