The broth is dark and heavy, yet almost free of the porky smell that puts some people off dwaeji gukbap (pork and rice soup), which makes it an easy first bowl. Sliced pork goes in, and thin somyeon noodles from the self-serve corner can be added freely. Order sundae-suyuk, boiled pork with Korean blood sausage, and a separate bowl of broth comes with it, a classic drinking-snack setup.
