Gyeyeolsa 계열사

Gyeyeolsa is a fried-chicken restaurant on the first floor at 7 Baekseokdong-gil near Changuimun Gate in Buam-dong, Jongno-gu, Seoul. A large chicken is cut into pieces, fried in a thin coating, and served in a basket with thick sections of potato. The crust is closer to old Korean market-style fried chicken than to a thick, soft batter. It breaks with a firm, rough crispness and uses restrained seasoning rather than a heavy sauce. Breast meat retains more moisture immediately after the basket arrives, but it can become dry or firm as it cools. Drumstick and thigh have a different fat content and grain, remaining comparatively softer after the breast changes texture. The potatoes are fried with the chicken. Their outer surface becomes lightly crisp while the center retains moisture and a fluffy starch texture. A seasoning sauce served with the chicken can also be used for the potato pieces. Golbaengi-somyeon is a separate plate combining sea snails, vegetables, spicy seasoning, and thin wheat noodles. It adds acidity, heat, seafood, and a cooler noodle texture between pieces of simply seasoned fried chicken. Draft beer is another common accompaniment, placing cold beer beside the hot basket and seasoned noodles. The chicken occupies the center for sharing by cut, while the potatoes function as the starch within the same frying method. The most relevant eating order is based on how temperature affects the meat: breast first while hot, followed by drumstick, thigh, and potatoes. Golbaengi noodles can be added when the table wants a spicy mixed dish rather than another fried item. Fried poultry, fried potato, and seasoned seafood noodles form the three principal components without relying on takeout conditions, queue timing, or access instructions to explain the food.
