The kitchen insists on using only domestically sourced ingredients, from the kimchi to the pork back-bones, a commitment that contributes to the broth's notably clean character. Each stone pot arrives packed with three large bone pieces visibly loaded with plump, moist meat that separates effortlessly from the bone. The broth is oil-free, clear, and mildly spicy, with a subtle layer of finely ground perilla seed powder lending a nutty undercurrent.
