This yang-daechang house once grilled under vinyl sheeting in an open-air stall, and after redevelopment it moved into a new building on Gamil-namno. Order yang, beef tripe, and daechang comes with it, grilled at the table by staff. Wrap the grilled pieces in seasoned lettuce, and when the fat builds up, take a spoonful of red dongchimi, a chilled radish water kimchi. Makchang and heart go into their own dipping sauce. On busy weekday evenings one staff member covers several tables and the grilling help rarely comes around.
