Chueotang, loach soup, comes in a large pot rather than an earthenware bowl and keeps simmering on the table burner while you ladle it out. One portion fills about two bowls. The ground-loach version is thick, mild and not salty, and tong-chueotang keeps the loaches whole. Sprinkle sancho and black pepper into your own bowl, not the simmering pot, for a stronger aroma, and add hand-torn dough if you like. Megi bulgogi, catfish bulgogi, is wrapped in perilla leaves with green onion kimchi, garlic and ssamjang, and staff wrap the first bite for you. Abalone and rice cakes have recently joined the platter. Fried rice and a complimentary spicy catfish broth finish the meal.
