Down a flight of stairs in Gwancheol-dong, a long, dimly lit counter puts the spotlight on the bartender's station and the glassware. From the bar seats you can follow every step, from shaker to mixing glass to the finished pour. The Unusual Negroni combines gin, a bitter fortified wine and herbal notes over a large ice cube, with orange peel adding citrus on top. Beyond the printed list, the bartender builds drinks to order once you describe the spirit, sweetness, acidity and strength you like, and single malts and bourbons are poured neat or on ice. Food runs to gochujang-dressed beef tartare, a warm dish served with baguette, and small plates of cheese or nuts.
