Eunha Gopchang 은하곱창

Big, thick pork intestines (gopchang) stay chewy in a fiery broth, with little of the funk this cut can carry. The pork intestine hot pot is essentially the only dish. Crown daisy greens and perilla leaves sit at a self-serve station, free to refill; the more crown daisy you add, the brighter the broth tastes. Dip the intestines in the sauce that comes with them, and glass noodles come in a generous extra portion. Once the pot is empty, fried rice made in the leftover sauce finishes the meal.
